    Relaxing in the Savor of a Rankyo Gorge

    The aristocrats of the Heian period lived in Kyoto and went to their villa in Arashiyama to enjoy nature and boating in the elegant atmosphere.Even today, the cuisine served at Arashiyama, where rich nature is timeless, is a quiet and peaceful experience.All the dishes use rich ingredients gathered in the capital of Kyoto to create carefully prepared dishes that are full of nourishment and comfort to the body and soul.The soup stock for the soup bowl is seasonally adapted to delight both body and soul.The summer soup is refreshing, while the winter soup is comforting, with the deep savory flavor of kelp.Following the tradition, the savory flavor is brought out by carefully selecting kelp and dried bonito flakes and making minute adjustments to the water temperature and soaking time according to the season. The nourishing cuisine with a playful touch of tradition makes each dish even more special.

    Seimei, the 5th season of 24 solar terms, is a time when flowers are in bloom, the blue sky is clear, and a fresh wind blows.In the appetizer, three different seasonal shellfish combined with spring wild vegetables, topped with pickled plum jelly, create a fresh and colorful scene as if flowers are opening under a blue sky.It is a peaceful time to enjoy the essence of Kyoto cuisine, its playful flavors, and the milestones of the calendar.

    Impressed by Japanese cuisine that brings out the best of the ingredients, Takahashi began his culinary career at the age of 19. He honed his skills at a traditional Japanese restaurant in Kyoto for twenty-five years, serving as a head chef. In March 2021, Takahashi became Executive Chef at HOSHINOYA Kyoto. He pursues to add a playful touch to traditional Japanese cuisine and create dishes that are a pleasure to eat.
